National Empanada Day

Saturday, April 8th is National Empanada Day! According to thespruce.com, empanadas originated in Spain hundreds of years ago, in fact a cookbook that was published in 1520 includes a recipe for “Seafood Empanadas”. The name empanada comes from the Spanish verb empanar, meaning to wrap in bread. Today you can find many different variations of empanadas around the world!
