Filet Mignon is cut from the smaller, choice end of a tenderloin. For that reason, it is typically the most expensive cut of beef. One of the more popular ways to prepare a filet mignon is by wrapping bacon around it. This is because filets are typically lean; adding the fat of bacon during the cooking process infuses extra flavor to this delicious meal.
Filets are typically cut into one inch or two-inch heights, and available in either four- or eight-ounce sizes.
Although a filet is cut from the tenderloin, it is available in different cuts. The most popular cut is the prime cut, available from any type of cattle. The Angus cut comes from vegetarian fed cattle and is considered one of the best types of beef available.
