Filet Mignon is cut from the smaller, choice end of a tenderloin. For that reason, it is typically the most expensive cut of beef. One of the more popular ways to prepare a filet mignon is by wrapping bacon around it. This is because filets are typically lean; adding the fat of bacon during the cooking process infuses extra flavor to this delicious meal.
Filets are typically cut into one inch or two-inch heights, and available in either four- or eight-ounce sizes.
