Unraveling the Myth of Jumbo Shrimp: A Guide to Understanding Shrimp Sizes

Shrimp lovers, it’s time to debunk a common misconception in the seafood world – the existence of “jumbo shrimp.” While you may have seen this label at your local supermarket or heard it tossed around in culinary circles, the truth is, there’s no such thing as jumbo shrimp.

Shrimp are typically sold by count per pound or kilogram, rather than standardized sizes like small, medium, or large. This count represents the number of shrimp you can expect to find in a pound, with larger shrimp having fewer pieces per pound and smaller shrimp having more. So, contrary to what the term “jumbo shrimp” might imply, the smaller the count, the larger the shrimp.

For example, a designation like 16/20 means there are approximately 16 to 20 shrimp per pound, indicating larger-sized shrimp. Conversely, a count of 41/50 suggests smaller-sized shrimp, with 41 to 50 pieces per pound. When in doubt, remember: smaller numbers mean bigger shrimp.

When it comes to purchasing shrimp, you’ll encounter two primary packing methods: individually quick frozen (IQF) and block frozen.

IQF shrimp are quick-frozen individually, typically packaged in 1 or 2-pound bags for convenient storage and portioning. This method preserves the quality and freshness of each shrimp, making them a popular choice for home cooks and restaurants alike.
