January is National Slow Cooking month!  The slow cooker, more popularly known as the Crockpot, gained popularity in the 1970s when more women entered the workforce.  It allows for meals to be cooked unattended over several hours.  Meals that can be slow cooked include anything that would otherwise be boiled, such as soups, stews, pot roasts, and many others.
